Easter was a little different this year with the quarantine going on. Greg and I stayed in our apartment, just the two of us. I wanted to make something yummy and hearty! Before quarantine I tried a hash brown skillet at a restaurant and it was so good, so I thought I would try and make it myself! It turned out delicious and was a hit with Greg as well! Here is the recipe so you can try it out 🙂
Ingredients:
- Olive oil
- Half a yellow onion
- 1 green pepper
- Salt
- Pepper
- Fajita seasoning
- 6 slices of bacon
- Vegetable oil
- Frozen hash browns
- 2 eggs
- Hot sauce
- Green onions
Directions:
- Dice up your green pepper and half of a yellow onion. Put some oil in a pan over medium high heat. Add the onions and peppers. Sprinkle with salt, pepper, and fajita seasoning. Cook until the vegetables are soft. Set aside.
- Fry up your bacon in a pan over medium high heat. Place cooked pieces on a plate with a paper towel. The paper towel will soak up any extra grease from the bacon.
- Get a large skillet and poor 4-6 TBSP of vegetable oil into the pan over medium to medium-high heat. Cook the hash browns for 6 minutes on one side and then flip over and cook for another 6 minutes. Then, I stir mine up to get them a little more crispy! While those cook, chop up the bacon into ½ inch pieces.
- Once your hash browns are cooked and crispy, add in the veggies and bacon, stirring everything up to get warm.
- While the hash browns are finishing up, add about 2-3 TBSP of oil to a small pan. Once hot, crack an egg into the pan. Sprinkle it with salt and pepper. Once the white is mostly cooked, flip once to cook the other side. I like my egg to be over medium so it runs into the hash browns. The egg will cook very fast, so don’t walk away!
- Spoon the hash brown mix into bowls and top with a fried egg. Sprinkle with green onions and a little hot sauce. You can also slip in some extra bacon if you have left over pieces!
