Avocado Toast

Ever since I have discovered avocado toast, I have been hooked! It’s such as easy breakfast or a quick snack on the weekends when I’m not teaching. There are a lot of ways to mix it up as well, which makes it versatile. Here is the recipe for the basic version I like to make.

Ingredients:

  • 2 pieces of bread (what ever is your favorite type)
  • 1 large avocado
  • Everything But the Bagel Sesame Seasoning
  • 1 Lemon

Directions:

  1. Cut your avocado in half. Slice up one half and put into a bowl. Mash with a fork until it is mashed up with some small chunks still left.
    • TIP: If you are only using half, keep the half with the pit for later. It will help keep it longer. You can use both halves but I usually just use one. You can put some lemon juice on it and save the other half for a salad later in the day or just eat it on it’s own (delicious)!
  2. Place your bread in the toaster and wait for it to get toasted!
  3. Once you have your toast, take your mashed avocado and spread onto the two slices of bread.
  4. Sprinkle the Everything But the Bagel Sesame seasoning from Trader Joes. This stuff is AMAZING! I completely understand the hype haha If you don’t have the seasoning, you can buy it from Amazon HERE. You can also top it with salt and pepper!
  5. To finish up, squeeze a little bit of lemon juice on top and you are done!

Optional: If you like a little heat, you can add some hot sauce on top. It is also delicious with a fried egg on top if you are looking for some protein with your meal. Get creative with your toppings and enjoy!
